In 5 words: Leave it to the frontend.

MEncoder is a backend workhorse, it needs to be capable of doing anything 
given enough input.
All kinds of friendliness go to the frontend, as over there you can go 
crazy, you can have presets, slider thingies, etc.

That's just about my view on it.

I actually don't use MEncoder all that much to be honest, but this is my 
vote.
